King's Soup

I found this amazing recipe on this incredible website. Go check it out!

This is a traditional Irish soup that has Steel Cut Oats as an ingredient. Ummm.... steel cut oats in soup? Sounded just odd enough to try.

I modified the recipe a bit to make it a lot less sodium. And it came out GREAT.

King's Soup (4 Serving, 5 PointsPlus)

1 tbsp extra virgin olive oil
3 leeks, white and light green parts only, sliced (I bought 2 bags of cleaned-cut leeks because cleaning all the sand out of leeks is a big pain.)
4 c water
2 tbsp no-sodium chicken bullion
1.5 c 2% milk
0.5 c steel cut oats
black pepper
salt to taste
0.5 c sliced chives for garnish

In a large pot, cook the leeks in the oil for 15 mins over medium heat.

Add the water, bullion, milk and bring to a light boil. Add the oats and black pepper.

Cover, reduce heat, and simmer for 45 mins. Salt to taste. Top with chives.


This was soooo good and had a great "chowder" texture. My husband loved it and went out and bought more leeks so I can make it again this week!
